Maple syrup and honey have some surprises in store this autumn.

Well Dressed Food in Tupper Lake, N.Y., specializes in condiments, sauces and snacks made in the Adirondacks. Its North Country buckwheat honey with walnuts, left, would be perfect atop buckwheat pancakes. A spoonful of its Adirondack honey with pecans would enhance roasted sweet potatoes. The honeys are $9.95 for 11.8 ounces from welldressedfood.com.

Brown Family Farms in Brattleboro, Vt., which specializes in maple syrup, has something different to wake up your pancakes or waffles on a cold morning: Maple Apple Dollop, a syrup with tender little pieces of apple mixed in. Blueberry and cranberry are two other flavors. These syrups, which could also be poured over ice cream, are $5.99 for 7.17 ounces from brownfamilyfarmmaple.com.
